I’m a little embarrassed to admit how long I had these bananas. To be honest, I’m not really sure. But, that being said, what good bananas to bake with! I’ve never actually made banana bread or muffins so I figured in the spirit of my ‘do something new everyday in June’ initiative, this would be a good time to check it off my list. I only had two, which was enough for half of most recipes, so I went muffins over bread, and I only had pistachios, so I used those instead of pecans and you know what? They turned out great.
In Tyler Florence’s recipe you mash half of the bananas and whip the other half with sugar, so the batter is light and fluffy. Then the mashed bananas and nuts are folded in giving a nice mix of textures. Really, in the end it’s a delightful little muffin that I’ll be eating for breakfast the rest of the week!
Spice thought they smelled good too!
Also – I want to get y’all excited for the end of the month because I’m going to have some fun things to share. Like I mentioned, I’ve been doing something new EVERY day in June, which has been a great little experiment. I’m checking things off my SF bucket list and can’t wait to tell you all about it.
